As it happens, I had half a red onion and some shredded chicken in the fridge so I thought we'd have bbq chicken pizza "fancy style" tonight, but I am categorically against cooking any food that makes my entire house smell for days, so I googled to see if there was a way to caramelize onions outside on the grill and google came to my rescue. Basically it told me to throw the onions on some foil with butter, salt and pepper, wrap them up and let them do their thing for awhile. I threw them on the grill and what do you know, it worked! They aren't as firm as I'd like (too much butter? didn't cook long enough?) but they have a hint of caramel color and smell amazing so I will call it a success. Hopefully they'll firm up again a bit once I put them on the pizza tonight. I think NJhusband is going to love the "honeymoon" version tonight.
